BERGERAC RED

SANG DU SANGLIER 2012

Merlot 85% / Cabernet Franc 15%

Tasting notes: a very pretty wine , charming and well-balanced. Deep concentrated hue. Intense and complex nose : aromas of dark fruits (blackcurrant, blackberry)  with oaky notes. This complexity is reflected in the mouth showing at the same time softness, richness and persistence. This delicate and generous wine is already very pleasant ; it  will also keep in the bottle for many years and  harmonize with sophisticated cuisine.

Vinification: selection of our best Merlot vines ; made in stainless steel vats ; a week fermentation at 25°C ; pre-fermentation maceration at 10°14°C, and post-fermentation maceration, full vat, during 10 days ; temperatures under control. Traditionally aged in French oak barrels for 12 months. Labour of the soil: no herbicides. Production in bottles : 3,000

CHATEAU DE FAYOLLE 2014

Merlot 90% / Cabernet Franc 10%

With its ruby hue, leather and woody nose, and  soft palate, this red Bergerac is  a well-balanced generous wine with fine tannins and a melted mouthfeel. It can be appreciated both as a young wine or will improve with age, in the bottle over several years. Cool service temperature around 15 to 18°C. Production in bottles : 15,000

CHATEAU DE FAYOLLE 2013 

Merlot 90% / Cabernet Franc 10%

Tasting  : Intense nose of red and black fruits ( blackcurrant) with spicy notes. A fruity round mouth with soft tannins and a pleasant freshness at the end. An harmonious wine which can be drunk young or kept a few years. One star in  Guide Hachette 2016. Production in bottles : 6,000

CHATEAU DE FAYOLLE 2011/2012

78% Merlot, 22% Cabernet Franc.
Concentrated hue. Heady nose of dark fruits (blackcurrant, raspberry, redcurrant) with earthy undertones. On the palate the crispness of the fruit and supple tannins are particularly compelling. It can be appreciated both as a young wine or will improve with age for several years in the bottle.

2012 Tasing notes Gilbert & Gaillard: Concentrated hue with purple blue tints.  Intense nose of red and blackberry fruits with spice undertones.  A generous wine with fine tannins and a melted mouthfeel.  The fruit is nicely showcased.  Calls for red meat.

Merlot 68%  Cabernet Franc 17% Cabernet Sauvignon 15%
This combination gives both wines a broad richness and a full flavour that is soft and melted whilst displaying intense notes of red berries. They are beginning to be ready now and will also age very well over the next three to four years.

BERGERAC DRY WHITE

CHATEAU  DE FAYOLLE 2014

Sauvignon 95%  Sémillon 5%

Tasting notes: Pale gold. Inviting floral and citrus-driven nose. Supple, light, soft palate supported by a delightful fruity freshness. A sauvignon for pleasure that would go down well as an aperitif. Serve chilled with shellfish, white fish and meats. Production in bottles : 7,000.

BERGERAC ROSE

CHATEAU DE FAYOLLE 2014

Merlot 10% / Cabernet Franc 90% 

Tasting notes: shiny pale pink  hue. Expressive nose of red fruits : cherry, strawberry and raspberry. Fine and delicate aromas. This wine, meant to be drunk young, will be a marvellous accompaniment for your barbecues and summer dishes. 

Vinification: in stainless steel vats; the hand-picked grapes are crushed a few hours after picking ; fermentation at low temperature to keep the maximum fruit potential ; temperature under control all along the vinification ; filtration before bottling. Production in bottles: 2,500

SAUSSIGNAC

CHATEAU DE FAYOLLE  2013 

100% Sémillon

Tasting notes: a luscious sweet wine. Shiny pale gold hue. Intense and complex nose of candied citrus fruits ( lemon, orange), then of quince, ending with toasted and spicy notes. A rich smooth and elegant palate with a touch of chocolate and toffee.  A wine which can be kept for over 25 years. Serve as an aperitif or with foie gras or roquefort cheese.

Vinification: hand-made selective picking, only botrytrised grapes; late harvest. Fermentation in barrels.

Production  : 3,600 bottles of 500 ml. Residual sugar : 110g/l.

CHATEAU DE FAYOLLE 2006/2007

Don’t miss out on these very nice sweet whites which bear the Saussignac AOC label and compare unashamedly with the great Sauternes appellation wines.

SPARKLING WINE

FAYOLLE BLANC DE BLANCS

100% Sémillon

Tasting notes : Pale yellow. A hint of grapefruit brings a certain vivacity to its fine and elegant nose. Perfect as an aperitif and for all festive occasions. Serve chilled ( 6°C - 42°F ). Will keep 24 months..

Vinification :  in stainless steel vats ; 48 hours skin maceration ; temperatures under control. After the first fermentation, the wine is made in accordance with the « Méthode Traditionnelle » ( which used to be called « Méthode Champenoise ») in 11° C underground cellars : natural second fermentation in the bottle, riddling and disgorgement. Production in bottles : 1,700

Review from the Spectator

"Travel a little further west into Bergerac and you will find the 15th-century Château de Fayolle, the top wine of which is 2012 Château de Fayolle ‘Sang du Sanglier’ (2). The terroir here is excellent — limestone, chalk and clay as it is in St Emilion — and the blend of grapes is similar too, with a pre- ponderance of Merlot.

The estate uses no herbicides at all and enjoys state of the art equipment and first- rate winemaking. The wine spends a year in French oak and its deep, dark, ripe fruit is concentrated, intense and complex. It’s Bergerac and not St Emilion, so it’s £11.65 and not £25. But it’s bloody good and an absolute snip."
